The south-eastern coastal region of Chiapas, called the Soconusco, is a hot tropical agricultural area devoted to the production of bananas and organic coffee. It is here that one of the sweetest Mexican organic coffees is derived. The cooperative growers of Chiapas are almost 99% indigenous from the region and use there traditional knowledge and technologies which form the basis of their organic coffee growing methods; preserving the tropical forest, protecting flora and fauna without the use of any chemical fertilizers or pesticides. Fair Trade Organic Chiapas coffee is characterized as a bright and slightly acidic Mexican coffee, with a long, smooth almost creamy body, showing delicate hints of chocolate.
